Pantry Bruschetta

If I have a last minute invitation to a gathering or football party - this is usually the dish I'm brining. I call it my pantry bruschetta because the majority of the ingredients I keep in my fridge and pantry shelves. Usually I just have to stop at the store quick for some fresh baguettes to pull this meal together! If it's peak party season - I even keep the bread sliced up in the freezer for an even quicker on call option!
I enjoy using the basil paste that comes in a tube in the refrigerated section. It usually lasts in the fridge for a month or two. It also is a great add in to spaghetti sauce during the winter months!
When serving for a party I usually like to serve the bread with a separate bowl for the tomato mixture with the bottle of the balsamic glaze on the side. This way everyone can fit to meet their preferences and it doesn't make anything soggy!

Preheat oven to 350 degrees.
Slice baguettes into 1 inch slices
On a baking sheet, lay out the slices of bread. Drizzle with olive oil and top with salt and pepper.
Bake for approximately 10 minutes or until lightly toasted.
In a small bowl, combine drained diced tomatoes, minced garlic, basil paste and 1/4c of olive oil. Add salt and pepper to taste.
Assemble the bruschetta with a piece of the toast, a tablespoon of the tomato mixture and a drizzle of the balsamic glaze.
