Chocolate Chunk Scones

These are my husband's favorite breakfast treat, which means for Father's Day, these are a must! These are delicious to enjoy in the morning for a quick breakfast with your morning coffee - or in his case, morning Mountain Dew. We also enjoy bringing these with to the cabin during the summer or using as a sweet side to a brunch celebration.
For this recipe, I highly recommend having a pastry cutter. It makes incorporating the butter and the flour much easier! I also recommend Turbinado sugar for topping. The bigger sugar crystals give a little crunch to the outside of the scones.

Preheat the oven to 400 degrees.
In a bowl, combine flour, salt, sugar and baking powder.
Add the cold cubed butter to the bowl and work the butter into the flour using a pastry cutter (or your hands).
In another bowl, add 3/4 c. heavy cream, eggs and vanilla extract and combine.
Combine the ingredients in both bowls together. Then add chocolate chunks and stir until well distributed.
Put the dough onto a floured counter to roll out the dough. I like to make a skinny but long rectangle. Then using a knife or bench scraper, cut right angled triangles out of the dough. You can make them as big or small as you would like based upon who you are serving.
Put the triangles onto a parchment paper lined baking sheet. Brush the top of the scones with the 1/4c heavy cream. Top with the Turbinado sugar.
Bake for 15 to 20 minutes or until they're lightly browned.
